There’s something about a Blueberry-Ricotta Crumb Cake paired with a great cup of coffee that makes it a moment to savor. There are three ingredients in this cake that make it stand out- ricotta, maple sugar, and cardamom. The combination works, delivering comfort. For the Crumb Topping • 3/4 cup all-purpose flour • 2/3 cup packed light brown sugar • 1/2 tsp ground cardamom • 1/2 tsp salt • 5 tbsp cold unsalted butter cut into pieces For the Cake • 10 tbsp unsalted butter at room temperature, plus more for the pan • 2 cups all-purpose flour • 1 tsp baking powder • 1 tsp cardamom • 1/2 tsp baking soda • 1/2 tsp salt • 3/4 cup granulated sugar • 1/4 cup maple sugar or brown sugar • 2 tsp lemon zest • 2 large eggs • 2 tsp vanilla extract • 1 tsp maple extract or maple syrup • 1 cup whole-milk ricotta cheese pulsed in a food processor until smooth • 1 1/2 cups blueberries fresh or frozen • Confectioners' sugar for dusting Instructions 1. Make the Crumb Topping: Stir together the flour, brown sugar, cardamom, and salt in a medium mixing bowl. Add the butter and work it into the flour mixture with two forks or your fingers until clumps form. Refrigerate until ready to use. 1. Make the Cake: Preheat the oven to 350 ℉. Butter a 9-inch round cake pan, then line it with parchment paper; butter the parchment. 2. Whisk together the flour, baking powder, cardamom, baking soda, and salt in a medium bowl. 3. Beat the butter, both sugars, and lemon zest on medium-high speed for 3 to 5 minutes until fluffy in a stand mixer or with a handheld mixer in a large bowl. Beat in the eggs, one at a time, then add both extracts. 4. Beat in the flour mixture, alternating with the ricotta, until combined. Fold in 1 cup blueberries. Spread the batter in the prepared pan, the batter will be thick. Then scatter the remaining 1/2 cup blueberries on top. Sprinkle the crumb topping evenly over the batter. 5. Bake until the cake is golden brown, and a toothpick inserted into the center comes out clean, 50 to 60 minutes. Transfer to a rack and let cool 15 minutes in the pan, then remove the cake to the rack to cool completely & enjoy! Inspired by Steve Jackson for Food Network #fullbloombites

Mom’s Sweet Holiday Tradition

Every December, our kitchen is transformed into a candy-making wonderland. My mom stirred up batches of shimmering hard candy—cinnamon, clove, peppermint, root beer, and anise—tossed in powdered sugar and mixed with love to share with family and friends. The whole house would fill with the unmistakable smell of Christmas, sweet and spicy and full of anticipation. This year, I kept the tradition alive and sharing the magic with you 💕

🍬 Holiday Hard Candy Mix
• 1 3/4 cups + 2 tablespoons white sugar
• 3/4 cup Karo Light Syrup
• 1/2 cup water
• 1 teaspoon flavored oil of choice (see recipe notes)
• 1/2 teaspoon food coloring (see recipe notes)
• 1/2 cup confectioner’s sugar (for dusting)

Instructions:
1. Roll the edges of a half sheet pan with heavy-duty aluminum foil.
2. Sprinkle the foil very generously with confectioner’s sugar.
3. In a heavy saucepan, combine sugar, corn syrup, and water. Stir constantly over medium-high heat until sugar dissolves and comes to a rolling simmer.
4. Stop stirring and simmer until a candy thermometer reads 300–310°F.
5. Remove from heat. Stir in flavored oil and food coloring.
6. Pour onto foil-lined half sheet pan. Let cool approximately 5-8 minutes- it should still be pliable. Have an oven mitt; the pan can get very hot.
7. Using a pizza cutter, cut into small squares. Let the candy harden completely. Crack into pieces and toss in confectioner’s sugar.
8. Store in an airtight container and share generously!
💡 Recipe Notes:
• Add food coloring and flavored oil once the mixture reaches 300°F and has been removed from the heat.
• Candy-making involves very high temperatures and sticky syrup. Keep a heatproof plate nearby for your candy thermometer and use oven mitts when moving or holding hot pans. Never use your hands to catch drips.
• I love using LorAnn Oils for flavoring—they’re easy to find on Amazon.
• Match your colors to your flavors, or play around and get creative. Have fun with it!
