The aroma fills the kitchen, promising a hearty and unforgettable meal. This was my first experience cooking a ribeye steak. The simplicity met indulgence, and we savored every single bite!
So juicy and flavorful, seasoned to perfection!
My first introduction to a bone-in ribeye steak was at my niece Jen's house in Las Vegas. Her husband, Cliff, grilled the most flavorful steak, and I knew I had to try making it at home. I started by giving it a good sear on the stovetop and finished cooking it to medium rare in the oven. It pairs perfectly with my Delicious Sautéed Zucchini and Squash.

Ingredients
- bone-in Ribeye Steak (1 inch) - the Rib Eye is known for its rich marbling and tender texture
- sea salt - use a salt that is chunkier than table salt for dry brining
- Spade L Ranch Beef Seasoning - known for grilling but a great in the oven too!
- Olive Oil -Olive Oil - use a light olive oil to maintain a 400 degree smoke point, I used cold-pressed.
- seasoned butter - the perfect finish to this Ribeye Steak
- parsley and rosemary - optional
Instructions
Cooking a steak can be intimidating, but this recipe is surprisingly simple!
Step 1: Dry brine the steak. Season the steak liberally on both sides with sea salt.
Once seasoned, you’ll want to place your steak in the refrigerator uncovered on a baking rack to allow airflow on both sides for at least one hour and up to two days to allow the salt to work its magic.
Step 2: Prep the steak. Remove the steak from the refrigerator*. Before seasoning, pat both sides dry with a paper towel to remove moisture (there should be very little).
*If you like your steak cooked medium, take it out of the refrigerator 30 minutes prior to cooking. Check the steak cooking guide in the post for the desired level of doneness.
Step 3: Season the steak. Brush both sides of the steak with olive oil. This helps the seasonings adhere better. Next, season both sides of the steak with pepper and Spade L Ranch Beef seasoning.
I only use salt for dry brining since Spade L Ranch Beef seasoning contains salt..
Step 4: Heat a frying pan or cast iron skillet over medium-high heat. Once it’s hot, place the steak in the skillet and sear it for 2-3 minutes on each side, including the edges.
Step 5: Transfer the skillet to the preheated oven after searing. Cook for 5-10 minutes to your desired doneness, using a meat thermometer to check the temperature. Let it rest for 5-10 minutes to allow the juices to redistribute.
7. While the steak is resting, add seasoned butter. I used garlic and shallots from Target. After it has rested, slice along the bone to separate the steak, cutting against the grain cut into slices.

Steak Doneness Guide
Rare: 120-125°F (cool to warm red center, soft and tender texture)
Medium Rare: 130-135°F (warm red center, perfect steak texture - recommended)
Medium: 140-145°F (hot pink center, slightly firmer texture)
Medium Well: 150-155°F (mostly brown center, firm texture)

- 2 Bone-in Ribeye Steaks 1-inch steak
- 2 T Spade L Ranch Beef Seasoning 1 T per steak
- 3 T Olive Oil 1 T per steak, reserving 1 T for the frying pan
- 2 T Butter
- 1 teaspoon Dried Rosemary
- 1 teaspoon Dried Parsley
Instructions
Preparation
- Remove the steak from the refrigerator 30 minutes before cooking to bring it to room temperature. Preheat oven to 450℉. Pat both sides of the steak dry with a paper towel.2 Bone-in Ribeye Steaks
- Brush ½ tablespoon olive and generously season both sides of the steak with Spade L Ranch Beef seasoning.3 T Olive Oil, 2 T Spade L Ranch Beef Seasoning
Cooking
- Heat a Frying pan: In a Frying pan or cast-iron skillet, heat 1 T of olive oil on medium-high heat until it’s very hot. 1 T Extra virgin olive oil
- Sear the Steak: Place the steak in the skillet and sear for 2-3 minutes on each side until a nice crust forms. Don't forget the sides of the steak
- Transfer to Oven: After searing, transfer the skillet directly to the preheated oven
- Cook to Desired Doneness: Cook the steak in the oven for about 5-10 minutes, depending on your desired level of doneness. Use a meat thermometer to check the internal temperature. See Notes for quick rundown of our recommended internal temperatures for different levels of doneness:
- Remove From Oven and add Parsley Butter: Add 2 T Butter, 1 teaspoon Dried Parsley, 1 teaspoon Dried Rosemary
- Resting: Let it Rest: Once the steak reaches your desired temperature, remove it from the oven and let it rest for 10 to 20 minutes. This allows the juices to redistribute throughout the meat, keeping it juicy
- Slice and Serve: After resting, slice the steak against the grain and serve.
Tips: Avoid Overcooking Keep an eye on the steak as it cooks in the oven to prevent overcooking. Remember, it will continue to cook slightly while resting
Use Tongs: When handling the steak, use tongs instead of a fork to avoid piercing the meat and losing juices.
