This Honey Miso Black Cod is one of my favorite “effortless but impressive” meals. The fish cooks up flaky, fresh, and never fishy, with a naturally buttery texture that melts into the sweet‑savory miso glaze. It’s healthy, quick, and tastes like something you’d order at a high‑end Japanese restaurant — perfect for a cozy home date night or a nourishing weeknight dinner. The air fryer gives the glaze that gorgeous caramelized, slightly blistered finish, and the whole recipe comes together with minimal prep.

Equipment
- 1 whisk
Ingredients
Honey Miso Marinade
- 4 tbsp white miso
- 2 tbsp water thins the marinade just enough to coat the fish
- 2 tbsp rice vinegar
- 1 tbsp honey great for caramelization
- 2 tsp sugar
- 1 tsp tamari, optional taste the marinade for salt level before adding
Black Cod
- 1 pound black cod fillet cut into 3-4 pieces
Instructions
Honey Miso Marinade
Whisk all ingredients together in a mixing bowl.
Prepare the Black Cod
Marinate the fish. Pat the black cod dry with paper towels. Place the fillets in a covered container or a gallon-size Ziploc bag, and add the marinade. Coat each fillet evenly with the marinade. Marinate for 30 minutes to overnight.- Prep the oven. Preheat the air fryer.
Prep the fish. Remove the black cod from the Honey Miso Marinade, letting any excess drip off. Pat the skin lightly with a paper towel if it’s very wet — this helps it crisp up rather than steam. Place the fillets skin‑side down on an air fryer paper liner, and if possible, leave space between pieces so the heat can circulate.
Cook. Air fry at 385°F for 12–15 minutes, depending on thickness. The glaze should turn glossy, caramelized, and slightly blistered.
Rest and serve. Let the fillets rest for 2-5 minutes, then plate and enjoy!
