  • 10 oz. Bucatani Pasta or straw pasta of choice
  • 1 tbsp Olive Oil
  • 1/2 Sweet Onion shallot
  • 1 cup Corn fresh or frozen
  • 1 cup Cherry Tomatoes diced. sun dried
  • 1/4 cup Klamata Olives sliced
  • 1.5 oz. 'Nduja 2 might be more flavorful
  • 6 cloves Garlic minced . try shaved?
  • 1/2 cup Pasta Water reserved
  • 1/4 cup Parmesan Cheese grated or finely shredded
  • 1 tbsp Butter
  • Salt and Pepper to taste

Top Plated Pasta

  • 2 oz. Whipped Ricotta Cheese
  • 1 oz. Parmesan Cheese shredded
