Air Fryer Honey Miso Black Cod

This Honey Miso Black Cod is one of my favorite “effortless but impressive” meals. The fish cooks up flaky, fresh, and never fishy, with a naturally buttery texture that melts into the sweet‑savory miso glaze. It’s healthy, quick, and tastes like something you’d order at a high‑end Japanese restaurant — perfect for a cozy home date night or a nourishing weeknight dinner. The air fryer gives the glaze that gorgeous caramelized, slightly blistered finish, and the whole recipe comes together with minimal prep.

Ingredients & Notes

  • White miso — mild, savory, and perfect for a glossy glaze.
  • Rice vinegar — adds brightness to balance the sweetness.
  • Honey — helps the glaze caramelize beautifully.
  • Sugar — rounds out the flavor and deepens the browning.
  • Tamari (optional) — adds saltiness; taste the marinade before adding.
  • Black cod fillet (1 lb) — naturally rich and buttery; cut into 3–4 pieces for even cooking.

Full ingredient list and instructions are in the recipe card below.

Possible substitutions

  • Black cod → Chilean sea bass or salmon work well with the marinade.
  • White miso → yellow miso, lightly stronger flavor but still delicious.
  • Tamari → soy sauce or coconut aminos- adjust saltiness to taste.
  • Honey → maple syrup till caramelizes, just slightly less sticky.

A few helpful tips

  • Dry the fish well – Patting the skin dry helps it crisp instead of steam.
  • Don’t skip the marinating time – Even 30 minutes makes a big difference in flavor. A light all-purpose flour coating to help crisp the surface
  • Use an air fryer paper liner – Keeps the glaze from sticking and makes cleanup easy.
  • Cook skin-side up flip at the end for a golden finish, if you enjoy eating it.
  • Let it rest – A few minutes helps the glaze set and keeps the fish tender.

Perfect Pairings

  • Mashed potatoes
  • Seasoned sticky rice
  • Steamed Bok Choi
  • Sesame broccolini
  • Scallion pancake
  • Cucumber salad

Ingredients

Honey Miso Marinade

  • 4 tbsp white miso
  • 2 tbsp water thins the marinade just enough to coat the fish
  • 2 tbsp rice vinegar
  • 1 tbsp honey great for caramelization
  • 2 tsp sugar
  • 1 tsp tamari, optional taste the marinade for salt level before adding

Black Cod

  • 1 pound black cod fillet cut into 3-4 pieces

Instructions

Honey Miso Marinade

  • Honey Miso Marinade ingredient shot
Whisk all ingredients together in a mixing bowl.

Prepare the Black Cod

  • Black cod fillet marinating in a light brown honey miso marinade inside a white rectangular dish.
Marinate the fish. Pat the black cod dry with paper towels. Place the fillets in a covered container or a gallon-size Ziploc bag, and add the marinade. Coat each fillet evenly with the marinade. Marinate for 30 minutes to overnight.
  • Prep the oven. Preheat the air fryer.
  • Black cod in air fryer basket with smart thermometer
Prep the fish. Remove the black cod from the Honey Miso Marinade, letting any excess drip off. Pat the skin lightly with a paper towel if it’s very wet — this helps it crisp up rather than steam. Place the fillets skin‑side down on an air fryer paper liner, and if possible, leave space between pieces so the heat can circulate.
  • Honey Miso Black Cod just out of the air fryer perfectly caramelized.
Cook. Air fry at 385°F for 12–15 minutes, depending on thickness. The glaze should turn glossy, caramelized, and slightly blistered.
  • Pan‑seared black cod with a caramelized crust served alongside sautéed greens and a creamy mashed potato scoop on a white plate.
Rest and serve. Let the fillets rest for 2-5 minutes, then plate and enjoy!
