Oven-Fried Chicken

If you’ve ever wished for all the crispy goodness of fried chicken without the mess and hassle of deep frying, this Oven-Fried Chicken recipe is about to become a favorite. With a simple coating of flour and seasonings, the chicken bakes to golden perfection while staying incredibly juicy on the inside.

Whether you’re serving it for Sunday supper, a weeknight dinner, or a backyard gathering, this oven-fried chicken delivers every time.

Golden, crispy oven‑fried chicken pieces topped with green onion on a plate, styled as a hero image.

This recipe uses bone-in, skin-on chicken thighs, which naturally stay moist and flavorful during baking. The result is crispy skin, tender meat, and all the comfort of traditional fried chicken with far less effort.

Three Ingredients – That’s It!

  • bone-in, skin-on chicken thighs
  • 2 teaspoons seasoning blend of choice
  • all-purpose flour

Full ingredient list and instructions are in the recipe card below.

What Makes This Oven-Fried Chicken Special? And Tips.

  • The secret is simplicity
  • Instead of a heavy batter, the chicken gets lightly coated in flour after being seasoned and resting. As it bakes, the skin naturally renders its fat, creating a crisp exterior while the meat stays juicy and tender.
  • Baking the chicken skin-side down first lets the fat render before flipping, resulting in beautifully crisp skin by the end.
  • Tip No. 1: Season Under the Skin. Seasoning under the skin helps flavor the meat, not just the surface.
  • Tip No. 2: Don’t Skip the Seasoning Rest Time. Allowing the chicken to sit after seasoning gives the salt time to penetrate the meat
  • Tip No. 3: Use a Thermometer. The best way to guarantee juicy chicken is to cook to temperature, not time.
  • Tip No. 4: Let It Rest. A short rest after it comes out of the oven lets the juices redistribute throughout the meat.

  • 2 teaspoons seasoning blend of choice see the notes for my go-to blends
  • 1/4 cup flour

Instructions

  • Preheat oven to 400°. Line a 9×9 metal or Dutch oven baking dish with nonstick aluminum foil.

  • Add the flour to a bag, then dredge each thigh, one at a time, until all sides are well coated. Place the chicken skin-side down in the prepared baking dish. See the notes for doubling this recipe.
  • Bake for 30-35 minutes. Remove the chicken from the oven and flip each piece so the skin is facing up.
  • Bake for an additional 30-35 minutes, until the internal temperature reaches 185°. I use a Chef IQ thermometer to take the guesswork out. See the notes for more information.
  • Remove from the oven and let rest for 5 minutes. Once rested, transfer to a serving platter and serve!
