This homemade Honey Dijon Vinaigrette brings together sweet, tangy, and savory flavors in the most effortless way — making it a go-to dressing for salads, roasted vegetables, grilled meats, and just about everything in between.

This one changed my salad game, and while I reach for it year-round, it’s my absolute fall favorite. The nuttiness of the walnut oil feels made for the season, and it pairs beautifully with autumn vegetables. I especially love it alongside my Fall Harvest Salad — the combination is just perfect.

  • Grain bowls: Spoon it generously over a warm bowl of farro, quinoa, or wild rice topped with roasted vegetables and chickpeas. It ties all the flavors together in the most satisfying way.
  • Roasted or grilled vegetables: Toss it with asparagus, broccolini, or Brussels sprouts before roasting, or drizzle it over hot-off-the-grill zucchini and summer squash.
  • Chicken or salmon marinade: Let protein soak in this dressing for 30 minutes before cooking. The honey caramelizes beautifully, and the mustard helps tenderize.
  • Dipping sauce: Serve it alongside a crudité platter or use it for dipping warm, crusty bread at the table. It’s that good.

Storage Tips

  • Tip #1: One of the best things about this dressing? It keeps beautifully, so you can make a batch at the start of the week and enjoy it for days. Store it in a sealed glass jar or airtight container in the refrigerator for up to 10 days.
  • Tip #2: Because walnut oil is the base, the dressing may firm up or partially solidify when cold—this is completely normal. Just pull it out of the fridge about 10–15 minutes before serving and give it a good shake or whisk to bring it back to its silky consistency. If you’re in a hurry, running the jar under warm water for a moment works perfectly too.
  • Tip #3: Walnut oil can go rancid more quickly than other oils at room temperature, so always store this dressing in the fridge. For the same reason, make sure your walnut oil itself is fresh and stored in a cool, dark place between uses.

  • 3 tablespoons honey
  • 2 tablespoons Apple Cider vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard

  • 1/8 teaspoon rosemary, recommended
  • 1/8 teaspoon Salt

  • Mix walnut oil, honey, apple cider vinegar, lemon juice, Dijon mustard, garlic, rosemary, and salt in a mixing bowl or shaker jar. Set aside.
  • Tip No. 1: The Jar Method
    Skip the bowl entirely and add all the ingredients directly to a small mason jar. Seal the lid tightly and shake vigorously for about 20 seconds. It emulsifies beautifully, and your storage container is already ready to go. One less dish to wash — always a win.
    Tip No. 2: Can't find walnut oil?
    A good quality extra-virgin olive oil works as a substitute, though you'll lose a bit of that distinctive nuttiness. If you go the olive oil route, try adding a teaspoon of crushed walnuts on top of your finished salad to bring back some of that flavor.

Notes

  • If there’s one small kitchen change I’d suggest this week, it’s to swap the store-bought bottle for this jar. It takes five minutes, uses common ingredients, and makes a remarkable difference in flavor. Once you try it on salads, roasted veggies, or as a marinade, you’ll be hooked.
  • This recipe uses common pantry staples and can last up to 10 days in the refrigerator.
  • I usually scale most servings for two by selecting the 0.5x option, but I don’t do that with this vinaigrette! Sometimes, I even double it!
