This vinaigrette has become my go-to for fall salads, perfectly complementing my Fall Harvest Salad.

The Perfect Pairings
- Mixed Green Salads: My preference is leafy greens but it pairs especially well with bitter greens like arugula or frisee- it balances their bite with sweetness.
- Beet and Goat Cheese Salad: A quick healthy lunch I serve Will, one of his favorites!
- Grain Bowls: Drizzle it over quinoa, farro, or wild rice bowls with roasted veggies and nuts.
- Grilled Chicken: Use it as a light marinade or finishing drizzle to add flavor.

Honey Dijon Vinaigrette
- 1/3 cup Walnut Oil
- 3 tbsp Honey
- 2 tbsp Apple Cider Vinegar
- 2 tbsp Lemon Juice
- 1 tbsp Dijon Mustard
- 1 clove Garlic pressed
- 1/8 tsp Rosemary recommended
- 1/8 tsp Salt

- Mix walnut oil, honey, apple cider vinegar, lemon juice, Dijon mustard, garlic, rosemary, and salt in a mixing bowl or shaker jar. Set aside.
Notes
- Walnut oil adds a rich, nutty depth that I love to experiment with in the fall. Feel free to swap for olive oil if you prefer a more neutral base.
- I usually scale most servings for two by selecting the 0.5x option, but I don't do that with this vinaigrette! Sometimes, I even double it!
- This recipe uses common pantry staples and can last up to 5 days refrigerated.
